Tamara Cohen is an American expat who has lived in Madrid since 2015. In 2020 she opened Mazál, a New York-style bagel shop and café in the Chamberi neighborhood. In 2022 we interviewed her about Mazál, how she got the idea and how it developed, and you can listen to that program here. Tamara’s new project is Tova, a bakery specializing in baked goods, both sweet and savory, from both Mediterranean and Eastern European Jewish traditions.
This week we are speaking with Tamara about how Mazál bagels have evolved since our last program, and about Tova bakery, which just opened this past June.
